Our journey takes us past the weathered remnants of Soulouksina’s ancestral home, where the whispers of bygone days linger amidst the crumbling stone walls. Here, amidst the tranquil embrace of nature, we pause to reflect on the enduring bond between the Cretan people and their land, a bond forged through centuries of stewardship and reverence.

Continuing our odyssey, we traverse the picturesque landscape of Pediada’s Province, where ancient churches and timeless vistas beckon us forth. Amidst the serenity of these sacred sites, we delve into the spiritual and cultural heritage of Crete, marveling at the architectural splendor and the profound sense of history that permeates the air.

As the sun begins its descent, casting a warm glow upon the horizon, we turn homeward, our hearts alight with the memories of our journey. Returning to Episkopi, we gather at the village’s beloved kafeneion, where laughter and camaraderie abound. Here, amidst the rustic charm of this quintessential Cretan gathering place, we unite to prepare a traditional Cretan aperitivo, a feast for the senses comprised of locally sourced delights and time-honored recipes.

Savoring the flavors of the land and the company of newfound friends, we toast to the spirit of Soulouksina and the enduring legacy of her love story. For in her tale, we find not only a glimpse into the past but also a timeless reminder of the importance of living in harmony with nature and embracing the principles of sustainability and stewardship.

As twilight descends upon Episkopi, we bid farewell to this enchanting journey, our hearts brimming with gratitude for the memories shared and the connections forged. Manolis Noikokyrakis 

Founder, guide

I am a passionate cyclist.
I love cycling on Crete island, discovering unknown routes and climbing
more meters every time.
I learned to ride my bike on the narrow streets of his village, Episkopi, when
I was a child spending summers and holidays with my grandmother and
aunts. Daily interactions with neighbours and villagers taught me the value of
slow living in full harmony with the earth and nature.

The love for rural life influenced my career path: I am an economist who
studied in Rome (Italy) where I encountered a different culture that
broadened my mediterranean way of thinking. I hold a master’s degree in
agri-food logistics from the University of Parma and I am a certified agricultural consultant and internal auditor.

Today, I embrace a green way of living in the city of Heraklion with my
family, and return to my village everytime I want to cycle in peaceful
surroundings. In full harmony with the earth and nature.
And in all the places i spent my childhood.

My mission is to share untold stories of the destination you have chosen. To
guide you through the rewarding fatigue of cycling in order to follow the pace
of old Cretan culture.
With me as local guide, you ‘ll meet the people of the village and their kind soul, and all together you will taste the unique flavors of the Cretan cuisine.
I will offer you the “filema”.
You may not easily find this word in dictionaries, but you will discover its
meaning by following Soulouksina!

The cuisine of Pediada


The cuisine of my village is simple and poor based on the principles of the Cretan Diet. Dishes without pretentiousness, antigourmet with primitive flavors and the protagonist the oil. Passion and love for food, time does not matter, only the result.

Wild greens, snails, mushrooms, herbs, artichokes, legumes and herbs are the favorite ingredients of our dishes.

who is waiting for her husband to return from the fields.
